Coconut Oil: Source of Healthy Fat
Coconut oil has been used for thousands of years as cooking oil, particularly in Southeast Asian countries, where it grows in abundance. In America, 19th century cookbooks promoted it. In these instances, LDL cholesterol levels declined while HDL levels increased, resulting in a better ratio of HDL to LDL. A review of studies conducted on those whose diets were high in coconut and coconut oil concluded that coconut oil leads neither to increased serum cholesterol nor increased risk of death due to coronary heart disease. While many studies exist, more are needed before specific health benefits can be established.
